November Menu Plan & Catching Up

Since moving here I've had a hard time getting into a routine schedule and also I've been trying a lot lately to revamp my recipes and meal options to a healthier, leaner menu.  For about 5-6 weeks of September and October we did really good with the Insanity program.  I lost about 5-6 pounds in those weeks and trimmed up a little, but then we got burnt out. 6 days a week of watching videos that are anywhere from 45 minutes to an hour gets old.  So we took a little break and I've been trying to vary it up a little with yoga, Insanity videos, and other circuit strength training.  It's been hard to get back and it's also been hard to do anything when the weather is cold.  I'd rather get out for a walk or bike ride than workout indoors and I also have a hard time eating healthier when the cold weather hits because all I want is comfort food, with the holidays you are surrounded by treats, and it seems produce gets expensive.  But I'm plugging through and trying to get there.  At least I'm trying right?

As for the November Menu Plan, here goes:
Blue means I'll post a recipe as that day comes

9th: Steak & Broccoli (grilled steak, small baked potato and side of broccoli)
10th: Homemade Chicken Nuggets (family friendly to try and help little Josh with his picky habits)
11th: New Recipe - Cafe Rio Tortilla Soup

13th: Veggie Fried Rice
14th: Teriyaki Noodle Bowl
15th: Baked Potatoes w/veggies
16th: Jamie's Minestrone Soup

19th: New Recipe - Black Bean Burrito Bake
20th: BBQ Chicken Sandwiches
21st: Chicken Stir Fry
22nd - 23rd: Thanksgiving
24th: Breakfast - German Pancakes
25th: Debdoozie's Chili
26th: Lean Burger (Hamburger Patty over mixed greens or healthy baked onion rings)
27th: Crockpot Cranberry Chicken
28th: Pizza (Here are my basics for crust and sauce)
29th: New Recipe - Tortilla Pie
30th: French Dip Sandwiches

Fish Tostadas, Bikini Bootcamp and Running Updates

We tried this recipe last night and it turned out really well!! Definitely a recipe that I'd stick to.  The only thing that I would change in the future is I would just put it on some chips instead of frying up a tostada. The tostadas wouldn't break apart and were really hard to eat.

As far as my Bikini Bootcamp update, things are going REALLY well!!  Here is my last weigh in:

 
I've been really excited because I lost 5lbs. and 2 inches on my waist in just two weeks!  Pretty amazing right?  I feel like I've just started to be able to change our lifestlye too. I'm incorporating some of my own recipes and changing them to be healthier and also eating smaller portions.  This is the best I've felt in years.  I can only imagine how it'll feel when I'm 20 pounds lighter (that's my goal). 

If you haven't looked at Bikini Bootcamp yet, I would highly recommend it to you.  It's been a simple plan that truly works if you'll stick to it.  It helps you figure out your lifestyle and how you can change it for a healthier you.

I was also really proud of this little number:


My goal out of running was to someday get to a 10:00 minute mile and last night I did it!! The run was hard, I pushed myself, but it felt so good. My hip flexor I think is finally back to normal, so I'm feeling really good when I run again.  Jake reminded me about running a 5K, so I think it's something that I'll be signing up for here in the near future.  Wish me luck!!

Back in the groove

Well with everything going on with the move, I stopped doing just about anything related to health including food and fitness.  A few weeks before the move I was so focused on packing up the house (and I packed just about everything by myself, since my hubby was so busy studying for his medical school boards), so many things were set on the back burner. 

But you will be proud to know that I'm getting back into the groove.  Now that we are a bit more settled here in our new home, I've committed myself to start the Bikini Boot Camp.

I took my "before" measurements, got my fridge and pantry ready, and started.  It wasn't the best week to start with a friend's birthday dinner at one of our favorite pizza restaurants, a long weekend with family in town (which always means trouble when it comes to food), but I feel for the first week I did pretty good.  Jake is also doing it with me which is good motivation and encouragement.  Over the past week I've done about 5 good days total and since that long weekend I'm just getting back into the working out and eating right this week.  It's amazing how much better I've already felt now that I'm eating less and better food and getting active everyday. 

So, here's to a good start and a new beginning.  I'll keep you updated on my accomplishments and measurements. 

For those interested, here are my "before" measurements:  (They are pretty pathetic as it's the heaviest I've been in my life, but you've got to start somewhere right?)





As an update on my couch to 5k business, I recently strained my left hip flexor and so it has been really difficult for me to get out and run without it giving me trouble.  Luckily it doesn't hurt on the elliptical, so I'll be sticking to that.  I'm not sure what this means for a 5K, but I don't want to risk further injury if I try to train for something like that.

Down 2 more and Bikini Boot Camp

Well I woke up this morning to find out that I was down 2 more pounds. I was surprised to see it, but I feel like my working out is finally to an intensity level and consistent enough to where I can see results.  It feels great! When it comes to eating, I have my good and my bad days. The stresses of life are only contributing to my constant sweet tooth.  Lucky me though, I came across this fantastic chocolate fix that will hopefully help it out. What a perfect summer treat that isn't bad for you. Looks like I'll need to start buying more bananas.  Take a look at this two ingredient "ice cream" recipe here

Also this week, a friend of mine introduced me to this Bikini Boot Camp program. Looks like an excellent plan and something that I could easily incorporate into my life.  If you haven't already seen this, i definitely would recommend you take a look. Hopefully I can really start to dedicate time to it after the move and once we are settled in Idaho.

Down

First things first, I'm down 2 pounds since last week.  It felt great to see those numbers down and I really have overall started to feel much better.

Jake and I have been running together for the past while and I've really enjoyed it.  Last Saturday we did a 20 minute run (no walking) and I did it sucessfully.  For me the first 5 minutes of running is difficult.  I feel weak and sore, but then after that I feel like I could go for much longer.   So I'm proud that I finished that up last week and am ready to tackle even longer times.  Before trying out the couch to 5k program I hated running.  But that's because I would just run until I'm worn out, my asthma would kick in and I would be hurting badly.  I'm glad that I found something that makes me feel like I can do it without killing myself.  We did a run this morning and I'm averaging about 10:30-11:00 minute miles.  Hopefully I can start cutting that down.  My ultimate goal is to run a 5K this fall with no walking in under 30 minutes (9:40 minute miles). From there we'll see how much more I can get into running. 

We've also been doing the P90X Ab Ripper workout 3 times a week (for 2 weeks now)and I've already noticed a huge difference.  I feel a little slimmer in the waist and definitely stronger in my core.  It's amazing how quickly your body can get fit when you work at it.

As far as food this week, I've had a bit more salads during the week and have been trying to incorporate more vegetables.  I think not having so many celebrations with lots of food, I've been able to  manage my cravings and make better choices.
